Vegetable Upma (Semolina)

 

Gather all ingredients together first:  2 minutes

Pre-cut all vegetables:  3 minutes

Cooking time:  10 minutes

 

Ingredients:

       

Onion 1
Semolina/Sooji/Rava 1 cup
Curry leaves 2 or 3
Ginger 1 Small piece
Carrot 1 small 
Peas 25 g
Tomato 1
Green chillies 1 or 2
Oil 2 tbsp
Cumin Seeds ½ tsp
Mustard Seeds ½ tsp
Coriander Leave 5-10 g
Salt to taste

Recipe: 

  • Fry semolina/Sooji/Rava and keep it for cooling.

  • Finely chop onions, green chillies, ginger, coriander leaves, and tomato.

  • Chop carrots in small pieces (diamond/cube shape).

  • Heat the frying pan and add 2 tbsp of oil.

  • Add cumin seeds, mustard seeds, and once it begin to sizzle and add curry leaves, ginger and stir for few seconds.

  • Add onions and fry until golden brown, the add the carrot and peas.

  • Add salt to taste, cook it for 5-6 minutes, stirring occasionally. 

  • Add coriander leaves and semolina/Sooji/Rava, stir it for few seconds.

  • Add 3 cups of hot water and stir it constantly untilit becomes thick.

  • Serve hot on a plate with coconut/mint/tomato/coriander leaves chutney.
