Vegetable Omelette

 
Gather all ingredients together first:  2 minutes

Pre-cut all vegetables:  2 minutes

Gather all utensils and lay out on counter:  2 minutes

Cooking time:  2 minutes (per serving)

 

Ingredients:

Oil

3 tsp

Cumin Seeds

¼ tsp

Mustard Seeds

¼ tsp

Yellow Gram (Channa Dal)

¼ tsp

Onions

1

Tomato

½ 

Green chillies

1 or 2

Ginger

small piece

Peas

10 mg

Graded Carrots

10 mg

Salt

to taste

Besan Flour (Yellow gram flour)

30 g

 

Recipe:

 
  • Mix the besan flour with water in a bowl to a consistency of thin cream.
  • Add finely chopped onions, tomato, green chillies, grated ginger, peas, grated carrot and salt.
  • Leave aside for 5 minutes.
  •  Heat the pan (Tawa) really hot and then turn the heat down to medium.
  • Add ½ tsp of oil with cumin seeds and once it begins to sizzle, add channa dal (yellow gram).  Leave it for a few seconds till it turns a little brown, and then mix it with the batter.
  •  Pour a ladle full of batter and form it like a small circle.
  •  Spread 1 tsp of oil around the edge of the circle to get some crispiness.
  • Cook it for a minute until it is golden brown (it will be visible on the edge). Flip the omelette, then spread ½ tsp of oil around the edge of the circle and cook it for a minute.
  • Then simply slide it out of the pan onto a plate.
  •  Serve it with coconut chutney / tomato Sauce / any other chutney.

Note:  You may choose to fry the veggies first.
