Finely chop onions, green chillies, ginger, and slice tomatoes.
Boil rice in a pot.
Grind half of chopped onions, sliced tomatoes, green chillies, ginger and garlic. Make it into a paste.
Heat the frying pan and add 2 tbsp of oil.
Add cumin seeds, mustard, and once it begins to sizzle add channa dal (yellow gram); fry till it is golden brown, then add curry leaves, other half of green chillies, garlic, and ginger; stir it for a few seconds.
Add onions and fry until golden brown, then add the paste.
Add salt to taste, cook it for 7-8 minutes, stirring occasionally.
Add coriander leaves.
Add the boiled rice, being careful not to break up the grains too much.
