Tindora (Ivy Gourd) and Potato Stir Fry

 
Gather all ingredients together first:  2 minutes

Pre-cut all vegetables:  2 minutes

Cooking time:  13 minutes

 
Ingredients:
 
Onion 1
Ivy gourd 150 g
Potato 1
Tomato 1
Channa dal (Yellow gram) ½ tsp
Oil 2 tbsp
Ginger and garlic paste ¼ tsp
Garam masala powder ¼ tsp
Black pepper powder ¼ tsp
Red chillies powder ¼ tsp
Turmeric powder ¼ tsp
Cumin Seeds ½ tsp
Coriander seeds powder(Dhania) ¼ tsp
Salt to taste
 
Recipe:
 
  • Slice ivy gourds.
  • Chop potato in small pieces.
  • Finely chop onions and slice tomato.
  • Heat the frying pan and add 2 tbsp of oil.
  • Add cumin seeds and once it begins to sizzle, add channa dal (yellow gram).  Leave it for a few seconds till it turns to be a little brown then add onions and fry until golden brown.
  • Add ginger and garlic paste and stir it for a few seconds.
  • Add red chillies powder, turmeric powder, coriander powder, garam masala and black pepper powder.
  • Stir it for a minute.
  • Add in tomato slices, sprinkle salt to taste and fry it again till it melts.
  • Add sliced ivy gourd and potato pieces, cook it for 10 minutes. Serve hot.
