Ridge Gourd Chutney

Recipe:
Peel off the ridge gourd’s skin, de-seed it, then chop it into small pieces.
Heat the frying pan and add 2 tbsp of oil.
Add grated ginger, red chillies, and fry it for few seconds, then add the ridge gourd, salt and cook it for 10 minutes; then grind it to a paste.
Heat the frying pan and 1 tsp of oil.
Add channa dal (yellow gram). Leave it for a few seconds till it turns a little brown, and then add curry leaves, turmeric powder, stirring occasionally.
Add the paste and cook it for 2 minutes, stirring occasionally.
Add asafoetida and stir it for few seconds.
Serve it as a side dish with rice/naan bread/roti or with snacks. This chutney can be mixed with plain rice as well. |
