Ridge Gourd Chutney

 

Gather all ingredients together first:  2 minutes

Gather all utensils and lay out on counter:  2 minutes

Preparation time:  8 minutes

 

Ingredients:
 
Cumin seed  ½ tsp 
Mustard seed ½ tsp
Oil 3 tsp
Yellow Gram (Split Channa dal) ½ tsp
Curry Leaves 1 strip
Ridge gourd 2
Red chillies (whole) 1 clove
Ginger ½ pieces
Green Chillies 2
Turmeric powder ¼ tsp
Asafoetida a bit
Salt to taste
 
Recipe:
 
Peel off the ridge gourd’s skin, de-seed it, then chop it into small pieces.

Heat the frying pan and add 2 tbsp of oil.

Add grated ginger, red chillies, and fry it for few seconds, then add the ridge gourd, salt and cook it for 10 minutes; then grind it to a paste.

Heat the frying pan and 1 tsp of oil.

Add channa dal (yellow gram). Leave it for a few seconds till it turns a little brown, and then add curry leaves, turmeric powder, stirring occasionally.

Add the paste and cook it for 2 minutes, stirring occasionally.

Add asafoetida and stir it for few seconds.

Serve it as a side dish with rice/naan bread/roti or with snacks.  This chutney can be mixed with plain rice as well.
