Lemon Rice

 
Gather all ingredients together first:  2 minutes

Pre-cut all vegetables:  3 minutes

Cooking time:  15 minutes

 
Ingredients:
 
Onion 1
Rice 100 g
Curry leaves 2 or 3
Ginger 1 Small piece
Red chillies (left whole) 2
Channa dal (yellow gram) ½ tsp
Lemon Juice 10 to 15 ml
Green Chillies 2 or 3
Oil 2 tbsp
Turmeric powder ¼ tsp
Cumin Seeds ½ tsp
Mustard Seeds ½ tsp
Coriander Leave 5-10 g
Salt to taste
Peanuts 20 g (optional)
 
Recipe:
 
  • Finely chop onions, green chillies, garlic, and ginger.
  • Boil rice in a pot.
  • Heat the frying pan and add 2 tbsp of oil.
  • Add cumin seeds, mustard, and once it begins to sizzle add curry leaves, red chillies; stir for a few seconds.
  • Add ginger, green chillies, and garlic; stir for a few seconds.
  • Add onions and fry until golden brown.
  • Add turmeric powder; stir for a minute.
  • Add salt to taste and lemon juice; stir for a few minutes.
  • Add boiled rice, being careful not to break up the grains too much.
  • Garnish with roasted peanuts (optional) and serve it on a plate.
