Eggplant Salad

 
Gather all ingredients together first:  2 minutes

Gather all utensils and lay out on counter:  2 minutes

Preparation time:  8 minutes

 

Ingredients:

 

Oil 2 tsp
Eggplant 1 or 2
Salt to taste
Cumin seeds ¼ tsp
Yoghurt 1 cup

 
Recipe:
 
  • Chop eggplant in small pieces (or slice it).
  • Heat the frying pan and add cumin seeds, then roast it for a few seconds.  Make it as a powder.
  • Heat the frying pan and add 2 tbsp of oil.
  • Add the eggplant, salt and stir fry for 5-6 minutes.
  • Beat the yoghurt to a creamy consistency; add the fried eggplant, salt and the cumin seeds powder and mix it well.
  • Serve it as a side dish with rice/naan bread/roti
